Reindeer Poop :)
Reindeer Poop
-2 cups of barely chopped walnuts (you want chunks)
-2 cups of mini marshmallows (try making your own!)
-1.25 lbs of dark chocolate (I use the huge 1 lb Plus bars from Trader Joes)
1) Line a baking sheet with parchment paper, and sprinkle the walnuts and marshmallows on top.
2) In a double boiler, or in a microwave bowl, melt the chocolate, stirring often.
3) Pour the chocolate over the walnuts and marshmallows. It's going to get really ugly, really fast. Mix it all up with a spoon until there is a huge pile in the middle of the parchment. Spread it out a bit (it will NOT cover the whole surface of the baking sheet), and then freeze it for 30 minutes.
4) Break in to chunks
It is seriously super ugly, but extremely tasty.

Weather Telling by Persimmons
According to folklore, you can predict the weather with a persimmon seed. Here's how to do it:
Cut open a persimmon seed. (Find persimmon fruit in your supermarket. It should be locally-grown to reflect your weather.)
Look at the shape of the kernel inside.
If the kernel is spoon-shaped, lots of heavy, wet snow will fall. Spoon = shovel!
If it is fork-shaped, you can expect powdery, light snow and a mild winter.
If the kernel is knife-shaped, expect to be "cut" by icy, cutting winds.

Prevention with Vinegar
The key to preventing moldy berries?
Vinegar! When you get your berries home, prepare a mixture of one part vinegar (white or apple cider probably work best) and ten parts water. Dump the berries into the mixture and swirl around. Drain, rinse if you want, (though the mixture is so diluted I find you can't taste the vinegar,) and pop in the fridge.
The vinegar kills any mold spores and other bacteria that might be on the surface of the fruit, and voila! Raspberries will last a week or more, and strawberries go almost two weeks without getting moldy and soft.

The expert panel German Commission E has approved the use of clove as a topical antiseptic and anesthetic. Laboratory test have shown that eugenol also exhibited marked antifungal activity. They also confirmed cloves' effectiveness in inhibiting food-borne pathogens as well as other bacteria.
During the Han dynasty (207 B. C. to 220 A. D.) those who addressed the Chinese emperor were required to hold cloves in their mouths to mask bad breath. Apple Cider Vinegar should be a staple in every home. It has a wide variety of uses and you can’t beat it as far as low price for health care! ACV is anti-fungal, anti-viral, and anti-bacterial.
To aid internal health make this:
2 Tbsp ACV, 2 Tbsp Honey, 1 Cup Water
Drink 1-2X/day for two weeks on, two weeks off. Then maintain by drinking 3-4X/week thereafter. This is just what I recommend because I’m a believer in too much of anything isn’t usually the best.

how about your spiritual life?
over the winter, life can become tedious and so we need to do some spiritual green spring cleaning. do you ever wonder if God gets tired of our tedious prayers that we pray over and over? we might need to add some creativity to our prayers. start with, thankfulness and praise! then first thing, thank Him for individual things/people in our lives and turn the music up! that's called an attitude of gratitude to the One who gave us life!

What Have You Been Up To Lately?
i started the Engine 2 Diet on Saturday and by the second day, i could tell a difference!
i didn't start this diet to lose weight, i started this diet to feel better to heal myself from the inside out. the greatest thing is you only do it for 28 days then if you want to continue you have made a habit and it is easier to keep on going.
i got the Engine 2 Diet book on my Nook and i am rereading through it constantly till i really get the hang of it. i will mention that i did cheat on the fourth day when i had a Chocolove milk chocolate with pretzels chocolate bar. it was soooo good and then i felt it the very next day. it felt like i had done something wrong cause my body no longer felt as good as it did before i made that mistake :( oh well pick myself up and start again!

Vacation
our family has been on vacation since feb 26 and we have been visiting my sister in Arkansas.

Do You Have the Time to Stop, Look, and Listen?
This is so awesome. Please take a moment to read:
A man sat at a metro station in Washington DC and started to play the violin; it was a cold January morning. He played six Bach pieces for about 45 minutes. During that time, since it was rush hour, it was calculated that 1,100 people went through the station, most of them on their way to work.
Three minutes went by, and a middle aged man noticed there was musician playing. He slowed his pace, and stopped for a few seconds, and then hurried up to meet his schedule.
A minute later, the violinist received his first dollar tip: a woman threw the money in the till and without stopping, and continued to walk.
A few minutes later, someone leaned against the wall to listen to him, but the man looked at his watch and started to walk again. Clearly he was late for work.
The one who paid the most attention was a 3 year old boy. His mother tagged him along, hurried, but the kid stopped to look at the violinist. Finally, the mother pushed hard, and the child continued to walk, turning his head all the time. This action was repeated by several other children. All the parents, without exception, forced them to move on.
In the 45 minutes the musician played, only 6 people stopped and stayed for a while. About 20 gave him money, but continued to walk their normal pace. He collected $32. When he finished playing and silence took over, no one noticed it. No one applauded, nor was there any recognition.
No one knew this, but the violinist was Joshua Bell, one of the most talented musicians in the world. He had just played one of the most intricate pieces ever written, on a violin worth $3.5 million dollars.
Two days before his playing in the subway, Joshua Bell sold out at a theater in Boston where the seats averaged $100.
This is a real story. Joshua Bell playing incognito in the metro station was organized by the Washington Post as part of a social experiment about perception, taste, and priorities of people. The outlines were: in a commonplace environment at an inappropriate hour: Do we perceive beauty? Do we stop to appreciate it? Do we recognize the talent in an unexpected context?
One of the possible conclusions from this experience could be:

What's For Dinner?
MOM’S HOMEMADE SLOPPY JOES
¼ teaspoon salt
1-pound ground meat
¼ cup onion diced or 1 tablespoon dried onion flakes
1 clove garlic minced or 1 teaspoon garlic powder
2 teaspoons chili powder
¼ cup ketchup
1 teaspoon yellow mustard
1 teaspoon Worcestershire sauce
1 8-ounce can tomato sauce
Sprinkle salt on cast iron pot and heat over burner
Brown ground meat and drain grease if any
Add onion and garlic and cook till tender
Add all remaining ingredients and heat thoroughly
Spoon onto bread or buns and serveJ

You Reap What You Sow
The Seed
A successful business man was growing old and knew it was time to choose a successor to take over the business.
Instead of choosing one of his Directors or his children, he decided to do something different. He called all the young executives in his company together.
He said, "It is time for me to step down and choose the next CEO. I have decided to choose one of you."
The young executives were shocked, but the boss continued. "I am going to give each one of you a seed today - one very special seed. I want you to plant the seed, water it, and come back here one year from today with what you have grown from the seed I have given you. I will then judge the plants that you bring, and the one I choose will be the next CEO."
One man, named Jim, was there that day and he, like the others, received a seed. He went home and excitedly, told his wife the story. She helped him get a pot, soil and compost and he planted the seed. Everyday, he would water it and watch to see if it had grown. After about three weeks, some of the other executives began to talk about their seeds and the plants that were beginning to grow.
Jim kept checking his seed, but nothing ever grew. Three weeks, four weeks, five weeks went by, still nothing. By now, others were talking about their plants, but Jim didn't have a plant and he felt like a failure.
Six months went by -- still nothing in Jim's pot. He just knew he had killed his seed. Everyone else had trees and tall plants, but he had nothing. Jim didn't say anything to his colleagues, however.... He just kept watering and fertilizing the soil - He so wanted the seed to grow.
A year finally went by and all the young executives of the company brought their plants to the CEO for inspection. Jim told his wife that he wasn't going to take an empty pot. But she asked him to be honest about what happened. Jim felt sick to his stomach, it was going to be the most embarrassing moment of his life, but he knew his wife was right.
He took his empty pot to the board room. When Jim arrived, he was amazed at the variety of plants grown by the other executives. They were beautiful -- in all shapes and sizes.
Jim put his empty pot on the floor and many of his colleagues laughed, a few felt sorry for him!
When the CEO arrived, he surveyed the room and greeted his young executives.
Jim just tried to hide in the back. "My, what great plants, trees, and flowers you have grown," said the CEO. "Today one of you will be appointed the next CEO!"
All of a sudden, the CEO spotted Jim at the back of the room with his empty pot. He ordered the Financial Director to bring him to the front. Jim was terrified. He thought, "The CEO knows I'm a failure! Maybe he will have me fired!"
When Jim got to the front, the CEO asked him what had happened to his seed - Jim told him the story.
The CEO asked everyone to sit down except Jim. He looked at Jim, and then announced to the young executives, "Behold your next Chief Executive Officer! His name is Jim!"
Jim couldn't believe it. Jim couldn't even grow his seed. "How could he be the new CEO?" the others said.
Then the CEO said, "One year ago today, I gave everyone in this room a seed. I told you to take the seed, plant it, water it, and bring it back to me today. But I gave you all boiled seeds; they were dead - it was not possible for them to grow.
All of you, except Jim, have brought me trees and plants and flowers. When you found that the seed would not grow, you substituted another seed for the one I gave you. Jim was the only one with the courage and honesty to bring me a pot with my seed in it. Therefore, he is the one who will be the new Chief Executive Officer!"
If you plant honesty, you will reap trust; if you plant goodness, you will reap friends; if you plant humility, you will reap greatness; if you plant perseverance, you will reap contentment; if you plant consideration, you will reap perspective; if you plant hard work, you will reap success; if you plant forgiveness, you will reap reconciliation; if you plant faith in God , you will reap a harvest. So, be careful what you plant now; it will determine what you will reap later.

Taking Care of Fevers The Green Living Way
when you or someone in your family has a fever from being exposed to germs and viruses, at that time the best thing to do sometimes is nothing.
in my opinion, a fever is by God's design the body's way of fighting the bad stuff invading one's body. when my children were younger, i would give them a sponge bath in tepid water, keep them dehydrated by giving them ice chips to suck on, which will most likely quickly melt due to the fever; water with a straw, popsicles, a wet rag placed upon the lips or to suck on, anything to keep liquid going in because one will get dehydrated quickly.
in addition, have on light weight clothing in order to keep the child or oneself cooled rather than hot
keeping one covered lightly with like a sheet or light weight blanket; is what i always did because too many covers make the fever want to linger, in my opinion. by using a light cover it keeps one from shivering so much.
the only time i gave Motrin was at night when i knew they needed some sleep to help the healing process.

What's For Dinner/Supper?
where i grew up, supper was your evening meal but others call the evening meal dinner
so what's the plan for your family's evening meal today?
we are having brown bean chowder and here's the recipe:
Brown Bean Chowder
4 cups brown/pinto beans + 4-8 cups water
3 tablespoons chili powder
1 1/2 teaspoons salt (optional)
1 pound ground meat
1 diced onion
1 tsp garlic or 1 clove garlic minced
2 small cans tomato sauce
1 cup bread crumbs
In a large pot combine the 4-8 cups water (your preference on how thick you want your chowder), beans, and 2 tablespoons chili powder. Bring to a boil and then turn heat down to medium.
Brown ground meat, garlic, and onions. When meat is browned then add tomato sauce, 1 tablespoon chili powder, salt, and breadcrumbs. Simmer this mixture 15 minutes.
Add the meat mixture to the beans and stir thoroughly until everything is combined and hot.
Enjoy!

i entered a contest the other day and in the entry form you had to name some of your pantry essentials.
i have been thinking about that and trying to confirm what exactly are some of my pantry essentials.
diced tomatoes, Sucanat and KAL brand Stevia, raw and unfiltered honey, steel cut oatmeal, peanut butter-100% natural with no hydrogenated fat, dried cranberries, ACV, Larabars, bow tie pasta and spaghetti, pinto beans, molasses, Wild Planet brand tuna, boxed organic broth like chicken, beef, and vegetable, brown rice, Basmati rice, King Arthur flour for homemade bread,
red-skin potatoes, onions, garlic....
we always keep a ton of organic herbs and spices in our cabinets to flavor whatever we are making
we rarely buy canned spaghetti sauce; we almost always make it from scratch
our family eats peanut butter in our oatmeal and hubby eats his with molasses, and you can't have homemade ginger snaps without molasses :) hubby drinks ACV and raw unfiltered honey together with HOT water as a medicinal tea every day, felicity and i luv pinto beans and we all luv our homemade bean dip

eat, drink, and be green
my daughter Felicity got me a beautiful green china tea cup and saucer set, two of them so we could have tea together. i got tired of drinking tea out of a coffee cup and on my wish list asked for a china tea cup to drink tea with. let me tell you there is a difference and its amazing and so delectable. i love it and so appreciate it. therefore i must say i love drinking various hot teas.
a few of my favorite drinks are: Green tea with lemon, Celestial Seasonings Candy Cane Lane, Earl Gray with Stevia and organic half and half......, water with lemon, Wisdom of The Ancients Green Tea with Organic SweetLeaf Stevia, a great lil wine i found at Thanksgiving called Stella Rosa Rosso; it has wee bit of carbonation in it and i really like it, and i also luv Ocean Spray 100% Cranberry juice that is a blend of 4 juices with no added sugar in it. i'm sure i have more but for now that is a few of my favorite drinks.

a few of my favorite drinks are: Green tea with lemon, Celestial Seasonings Candy Cane Lane, Earl Gray with Stevia and organic half and half......, water with lemon, Wisdom of The Ancients Green Tea with Organic SweetLeaf Stevia, a great lil wine i found at Thanksgiving called Stella Rosa Rosso; it has wee bit of carbonation in it and i really like it, and i also luv Ocean Spray 100% Cranberry juice that is a blend of 4 juices with no added sugar in it. i'm sure i have more but for now that is a few of my favorite drinks.

Cold/Flu Helper
Eucalyptus- mostly used for chest and nose congestion. It clears up even the most stubborn mucus associated with colds. Dab a bit on a warm wet wash cloth and inhale the vapors by holding it a few inches from your stuffy nose. It will open up your bronchial tubes and grant you the relief you need. You can also fill a bowl with warm water and add a couple of drops of eucalyptus oil to it. Breathe the healing vapors. It’s much better than most cough and cold medicines. We also put Eucalyptus in our diffuser and run it when we are feeling stuffed up in our noses from colds. Wonderful help and smells good too. We get our Eucalyptus from Mountain Rose Herbs.
Essential oils can also be used as a great rub. Mix the desired oil with lighter oil like olive or sweet almond oil to make the essential oil go farther and be easier to rub on your skin. Rub the oils on your neck, chest, and the bottoms of your feet for antibiotic effect to help fight viruses. It is much better for you to use essential oils than to use commercial medicines that may cause many different side effects. Be sure to use the oils correctly to maximize the effect that your looking for.
Dried Cranberries
7 Secrets to Dehydrating Cranberries the Green Living Way
Buying dried cranberries can be expensive.
You should try making your own dried cranberries.
#1 clean them with water that has white vinegar and lemon juice in it
#2 drop them in very HOT water 15-30 seconds til their skin-pops
#3 after the skin-pops take them out of the HOT water and put them in ice water
#4 take the cranberries out of the ice water and drain
#5 preheat oven to 350 degrees
#6 put the cranberries on a baking pan, put them in the oven, turn the oven off, and allow them to be in there 12-24 hours; they should then be either sticky to touch or dry
#7 now you have dehydrated cranberries the green living way and can be kept in refrigerator for up to 24 months or in freezer up to 8 years.
i luv dried cranberries! i make my own trail mix and put dried cranberries in it because Felicity despises raisins :)

Felicity's Better Than McDonald's Chicken Nuggets
Felicity's Chicken Nuggets
3 small cloves garlic or 1 teaspoon garlic powder
1 pkg of Panko bread crumbs
½ cup Parmesan cheese
1-teaspoon salt
½ teaspoon black pepper
buttermilk
3 boneless skinless chicken breasts
First take 3 skinless boneless chicken breasts and cut them into 1 inch cubes put them in a bowl and cover them with buttermilk and let them marinate for at least an hour
Meanwhile mince the garlic; then mix it with the Panko breadcrumbs, Parmesan cheese, salt and pepper all together
Take the chicken that has been marinating in the milk for at least an hour and drain the buttermilk then toss them to cover in the breadcrumb mixture
Put the nuggets on an ovenproof pan that has parchment paper on it and put the crumb covered nuggets on it.
Bake it in a 400-degree oven for 15-20 minutes until crisp
Check chicken nuggets to make sure they are fully cooked
Easy and delicious!
